Learn cooking tips for versatile zucchini

This week at the Farmers Market, Extension Agent Toi Degree will feature zucchini squash in a cooking demonstration. Dubbed as everyone’s favorite summer squash, zucchini is quite versatile. Its mild taste, thin skin and soft seeds make it possible for you to eat the entire thing. Zucchini can also be prepared in a number of ways — in salads, stuffed and baked, and, of course, in sweet breads. Zucchini can literally be used from the beginning of a meal to the end — appetizer to dessert. Best of all, it is a great source of vitamin C and low in calories. So come by the market to see me, shop and sample some fresh zucchini. This week’s featured recipe will be Balsamic Grilled Zucchini, it’s sure to be yummy.

It is important to shop early to get best selection as some items may be limited. Local growers make a special effort to produce clean and safe produce for their shoppers.
The market is open 8 a.m. to noon. Both senior and WIC vouchers are now being accepted at the Salisbury Farmers Market.
