Carleigh Beth Simmons graduated cum laude from Appalachian State University in August 2013 with a Bachelor of Science in Nutrition and Foods. She was also a member of Gamma Beta Phi.
A 2009 graduate of East Rowan High School, she is currently in the Distance Dietetic Internship Program through Meredith College. She plans to become a registered dietitian.
Carleigh is the daughter of Kay and Phil Simmons and the granddaughter of John and Betty Barringer and Jack and Margaret Simmons, all of Salisbury.
She extends a special thank you to St. Matthew’s Lutheran Church for providing yearly scholarships.
