New downtown: Go Burrito opens at long last

SALISBURY — The wait is over.

Go Burrito, the much-anticipated new downtown restaurant, has opened.
Owned by Mikey Wetzel and managed by Dory McClure, the two-story restaurant that occupies the former Carousel Cafe at 115 W. Fisher St. is open from 11 a.m. to 11 p.m. every day.
The menu includes chicken, pork, steak and veggie burritos, made to order while you watch with fresh ingredients like lime, cilantro and black beans.
Toppings include everything from cheese to marinated mushrooms to quinoa, a whole grain that serves as a meat substitute for vegetarians. All ingredients are homemade.
Kids can get a cheese quesdilla, and the salsa bar features eight made-from-scratch salsas, including unique offerings like pineapple and molasses.
The rooftop bar and first-floor patio are not open yet. Wetzel said he’s waiting for furniture and warmer weather.
Restaurant customers can dine on the first or second floor, which also features the Go Cantina Rum Bar, open from 5 p.m. to 2 a.m. Monday through Saturday. After 11 p.m., bar patrons use the side Go Burrito entrance to access the bar.
Sean Sindle, formerly of Tabu Bar & Lounge, manages the Go Cantina Rum Bar. Specialties include a variety of rum drinks with fresh crushed berries.
Wetzel struggled for more than a year to open the restaurant and was vocal about the difficulty he encountered with the construction permitting process. Go Burrito became a prime example of the frustration of developers who want to reuse old buildings in downtown Salisbury.
Since Wetzel started his project, Rowan County has revamped its building code enforcement department to be more business-friendly and help developers find safe but creative ways to rehabilitate vacant buildings.
