Try mini egg pizzas

Problem: Too many hard boiled eggs.

Solution: Deviled eggs. Egg salad.

How about egg pizza? You need four English muffins, olive oil, eight tomato slices, four sliced, hard-cooked eggs, grated mozarella cheese, oregano and salt.

Toast the English muffins, place on a cookie sheet, drizzle with a little olive oil, layer on tomato slices, hard-cooked egg slices, about half an egg on each, top with a little grated mozarella, oregano and salt. Broil 5 minutes or until cheese melts.

Legislature tackles food deserts

RALEIGH (AP) — Members of a North Carolina legislative committee agree pockets of the state with limited access to grocery stores are a problem. But leaders of the panel say there are limits to what they can do to eliminate the areas called food deserts.

A House study panel voted Monday on several recommendations after studying the issue. But committee co-chairman Rep. Edgar Starnes says elected officials can’t force a grocery store to build in food deserts.

A food desert is defined as areas where residents live more than a mile away from a grocery store. In rural areas, the distance is 10 miles.

The committee’s final report cited federal numbers showing 1.5 million people in food deserts in North Carolina. Those residents are more likely to suffer from certain health problems.

Weiner errors prompt recall

NEW YORK (AP) Kraft Foods is recalling 96,000 pounds of its Oscar Mayer wieners because they may mistakenly contain cheese.

The U.S. Department of Agriculture’s Food Safety and Inspection Service said Sunday that Kraft’s “Oscar Mayer Classic Wieners” may instead contain the company’s “Classic Cheese Dogs.”

The agency said the product labels are incorrect and do not reflect the ingredients associated with the pasteurized cheese in the cheese dogs. Those products were made with milk, a known allergen, which is not declared on the label.

The Food Safety and Inspection Service said it has not received reports of adverse reactions.

The products were made in early March and bear the number “Est. 537H” inside the USDA mark of inspection. People with questions about the recall are being asked to contact Kraft’s consumer relations department at (855) 688-4386.

Making treats with children

Kellogg’s Rice Krispies Treatmaking Contest 3 — Select at least 4 but no more than 10 ingredients from the contest Pinterest board, and create a recipe with your minor (17 or younger) child(ren). The first 3 ingredients must be Kellogg’s Rice Krispies, margarine/butter and marshmallows; the remaining 1-7 ingredients are your choice. You may not use ingredients that are not on the approved list. Recipe must take no more than 45 minutes to prepare. Pin your selected ingredients from the contest board to a Pinterest board of your own, with the recipe and a photo of the prepared recipe, perhaps including your child(ren) making it. Submit the board to the sponsor.

There will be 8 entry periods in this contest, and non-winning entries will roll over to subsequent periods. Deadline is May 21, 11:59:59 p.m.
