... and that means a lot of slaw to prepare

It takes a heap of slaw to fill the bellies of all the 30,000 or so people who go to the 4th of July celebration at Faith for barbecue, burgers, country ham and chicken sandwiches.

It takes enough slaw to fill 14 25-gallon plastic trash barrels. Now don’t get squeamish, here. These barrels have never been used for trash or anything but slaw. And they’re lined with heavy- duty construction bags.

It takes 1,700 pounds of cabbage to make enough slaw to fill 14 25-gallon trash barrels. And 10 cases of whole tomatoes. And 10 cases of tomato juice. Plus vinegar, sugar and red and black pepper.

The recipe isn’t a secret, exactly. It’s hand lettered onto the back of a Hoosier cabinet door inside the kitchen of the park grounds. But following the list of ingredients, the recipe says, “To your own taste.”

So even though the people who make the slaw do it pretty much the same every year, if you try making your own, your taste will probably make it different.

The biggest night is July 4, when Faith civic clubs — American Legion, American Legion Auxiliary, Faith Civitans and Faith Jaycees — will serve up 2,500 pounds of barbecue. The shoulders will go on the open pit July 3.

But barbecue will be available from opening night on, provided by Randall Barger, of the Faith Soda Shop and Restaurant. He said he sells about 15 shoulders a night.

And here’s a happy change. Pineapple sherbet, the signature desert of the Faith Fourth, will be available all week long, rather than just on July 4, for the first time.
